call them dips or spreads or sauces or whatever. obviously lots of possibilities for variations, but these are my go-tos:

hummus

white bean: for this and the previous, canned beans are perfectly acceptable but they’ll taste better if cooked from dry. do whatever you have the time for.

tzatziki

skordalia

baba ganoush

tapenade might go here if I liked olives

muhammara

romesco

htipiti

pesto could go here but it gets its own post

onion-sour cream

guacamole

squash-tahini-yogurt: date syrup/molasses can also be pomegranate molasses or maple syrup
